Aiyu Jelly

Last month, August 27th, I went for my vacation, I staredt my journey from the early morning, my whole family, that's me, my husband and my daughter, we went for our breakfast, so what's we ate? We ordered abalone noodle soup and a glass of aiyu jelly with lime juice and honey. Here i want to talk about this AiYu Jelly, so what is AiYu Jelly, what it's look like? I bought my aiyu jelly in can.
So how the aiyu jelly make? It is make from aiyu seeds. Here I find this recipe called Mango Yakult with aiyu jelly and basil seeds, you can see what the aiyu seeds look like.

aiyu seeds
cotton sack and string
water, 2500 cc for 1 heaping handful of seeds

! Important !
Make absolutely sure there is no oil residue on any of the materials you are using, this will cause the gel to fail.
Wash your hands very well, if you have sensitive skin wear food-safe gloves.
Do not add any sugar to the jelly before it sets
Do not use distilled water; normal drinking water will suffice.

1. Place the seeds in the cotton sack and tie it very securely shut.
2. Let the seeds soak in the water for 5 minutes.
3. Start to massage the sack. It will feel kind of like a gel stress-ball. Hold the end tightly shut while squeezing and massaging. A golden gel will be exuded.
4. Continue to massage the sack until no more of the gel is exuded -- it will start to feel grainy in your hand instead of soft and squishy. This takes about 10-20 minutes for 2500 cc of water.
5. Cover the jelly and place in the fridge for several hours to set.
6. Do not cut the jelly until you are going to serve, this reduces the amount of water that 'leaks' from the jelly as it sits. The jelly can be stored as is, or covered with honey-lime water (see recipe below).

Honey-Lime Water for Aiyu
Add more or less depending on your taste. I prefer it quite tart.

In a saucepan, combine:
3 cups water
1/4-1/3 cup honey
Juice of 2 limes

Heat and stir until honey is completely dissolved. Cool and store in the fridge.

Serve chilled with aiyu jelly.

Pear and Goat Cheese Bruschetta

When I see this recipe, I like it simple way to do it, "pear and cheese", or may be you do not have pear, you can instead of another fruit like apple, peach or your favorite fruits.
Adapted from Orgasmic Chef 
  • 1 red onion very finely diced
  • 2 firm pears finely diced
  • 2 tablesp finely sliced chives
  • 320 grams Goat Cheese
  • 125 mls of Bittons Lemon Dressing
  • 1 tablesp Bittons Orange Jelly to serve
  1. Combine all ingredients except lemon dressing
  2. Add dressing to taste and to combine
  3. Spoon onto toasted bruschetta
  4. Using a small spoon, drizzle completed bruschetta with orange jelly to serve

2 to 3 tablespoons extra virgin olive oil
1 large onion, chopped
2 to 4 cloves garlic, chopped
1 teaspoon ground cumin
8 to 10 cups chopped zucchini (about 5 to 6 medium zukes)
6 tablespoons uncooked white rice
8 cups chicken stock or vegetable stock
1 bunch cilantro, coarsely chopped
2 to 3 tablespoons freshly squeezed lemon juice
sea salt or Herbamare to taste

Heat a 6 to 8-quart pot over medium heat. Add the olive oil, then the onion and saute for 5 to 10 minutes or until onion softens and is beginning to change color. Add garlic and cumin and saute a minute more. Then add chopped zucchini, white rice, and chicken stock. Cover and simmer for 15 to 20 minutes or until zucchini is tender and rice is cooked.

Add cilantro and lemon juice to the pot. Remove from heat and puree in your blender or Vita-Mix in batches. I like to toss in the whole bunch of cilantro to one of the batches after I have already pureed it some. This way the cilantro doesn't totally break down while you are pureeing the soup. Pour soup into another clean pot or bowl, stir batches together, and taste. If it needs a flavor boost, add Herbamare or sea salt to taste. Source: www.NourishingMeals.com

Homemade Tofu Recipe

Homemade Tofu Recipe
Do you like tofu, here you can find the way how to make tofu yourself, it is very simple, this website will teach you the step.
300gm soy beans (Organic)
1 lemon
900ml water
1) Soaked soy bean overnight
2) Remove water the next day

3) Blend soy bean with an inch of water covering soy beans (Blending 1st round)
4) Add little bit of water to blend on 2nd round
5) Sieve using a muslin cloths
6) Keep the remainings Okara (I’m sun drying my okara, will think of how i want to use it later..)
7) Boil soy milk in a pot for 15 mins. Let it cool for a while 1 mins.
8) Skim and remove bubbles on the top.
9) Cut lemon into half and use a fork to squeeze lemon juice into a bowl and sieve it.
10) Place lemon juice into a stainless steel pot and pour soy milk. Stir only once and let it sit for 5 mins (I let it sit for 10 mins). ** Do not move it or it won’t curdle
11) After it curdle, pour into a muslin cloths and wrap into a squarish shape. Use a heavy object and leave it for 35 minutes.
Finally, after 35 minutes, removed your muslin cloth and cut tofu into square cubes.
