Steamed chicken with herbs

Emm......, I get this recipe from a recipe book. It was published in September 2009 by GIPH MEDIA PTE LTD.

Ingredients:
1 chicken thigh
10g sliced codonopsis (dang shen)
10g wolfberry (jizhi)
some shredded ginger
some chopped spring onions
some coriander

My tips: I change a little, Sliced codonopsis into codonopsis powder. I use 10g of codonopsis powder ( use blender to blend the sliced codonopsis into powder) and few sliced of codonopsis, salt and pepper, that would be beter than just using sliced codonopsis to marinade the chicken.

Marinade:
dash of salt
dash of pepper

Seasonings:
some hua diao wine
some light soy sauce
some sugar

Method:
1. Rinse and drain the chicken thigh. Cut into small pieces. Rub well with marinade and set aside for 30 minutes.
2. Place the marinated chicken onto a plate and add codonopsis, wolfberry, ginger and seasonings. Transfer to a steamer and steam for 40 minutes over high heat. Remove and scatter over spring onions and coriander before serving.

Tasty tips:
This dish may also be cooked using chicken breast meat

Tender boiled chicken (白斩鸡)

I bought this recipe named Hometown Local Chinese New Year Dish no.8, the first recipe I had learn is Tender Boiled Chicken, by Madam Cheong Pek Kee.

Ingredients:
Chicken, some water (just enough to cover chicken)

Seasonings:
Some salt and MSG(this is optional for me to add in)

Method:
Wash chicken until clean, smear seasoning evenly on top of chicken. Boil water in pot, put in chicken and cook for 15 to 20 minutes, switch off heat and cover with lid, continue to simmer for about 30 minutes, remove and cut into pieces, serve.

Tips:
A more savory to taste this dish, is try soaking basil leaves into soy sauce, then dip in chicken meat to taste it.

For me, I put few slice ginger with chicken when I simmer it. For the seasoning, if you don't have basil leaves, may be you can try use coriander into soy sauce and little small chilli(optional)
