Fried Asian style tomato Squid Mee hoon


Makes 2 serves


Ingredients:
Squid rings (about 200 gm)
1/2 pack of mee hoon ( vermicelli
Ener-G Foods Rice Vermicelli, 10.5-Ounce Bags (Pack of 12) or noodlesNong Shim Chapagetti Chajang Noodle, 4.5-Ounce Packages (Pack of 20))
1 egg
2 tomatoes
1 medium onions, sliced
salt, chili, light soy souce to taste
3tps Oil
Method:
1.Soak the vermicelli in cold water for 5 minutes, then scald them in boiling water. Drain well.
2.Heat oil in a non-stick frying pan over medium heat. Add eggs and fried half cook it.
3. Add Squid ring / seafood and fried half cook.
4. Remove from pan.
5. Add onion, cook until soft and fragrant. Be sure not to burn the onion. It tastes bitter otherwise.
6. Add tomatoes, water and increase heat to high. Add chili and bring it to a boil.
7.Add the meehoon, season with salt and stir thoroughly
8.Add the fried egg and squid into mee hoon.
9. mix well and serve
(If too dry, add little oil)
