A hint of lime, chicken, and corn make this a healthy and delicious dish to serve anytime!
* 1 Tablespoon Olive Oil
* 1 Large Onion, finely chopped
* 1 Large Tomato, finely chopped
* 2 Cups Cooked Chicken
* 4 Cups Chicken Broth
* 2 Tablespoons finely chopped Parsley or Cilantro
* Dash of Tabasco (optional)
* 1 Lime, cut into fourths
* Dash of Salt & Pepper
* 6 Ounces Tortilla Chips
In a large pot, heat oil over low heat. Add onion and a pinch of salt & pepper. Cook stirring for 5 minutes. Add tomato and parsley (or cilantro.) Cook 2 minutes, stirring. Add Tabasco, chicken, and corn. Cook 1 minute. Add Juice from lime, add lime shells, add broth and bring to boil. Reduce heat, let simmer for 5 minutes over medium heat. Remove lime shells, squeeze all juice out.
Serve over tortilla chips, or how you desire. It is also very yummy served with sour cream and shredded cheddar!
